Where the water comes from

The filling you assemble is not the filling you serve. Heat pulls moisture out of everything in the pie, and that water thins the sauce.

  • Raw or lightly cooked vegetables, especially mushrooms, leeks, and onions
  • Frozen peas or mixed vegetables added straight from the freezer
  • Chicken poached or added raw, which releases juices as it cooks in the pie
  • A sauce that was only loosely thickened and relied on looking right when hot
  • Condensation trapped under the lid when hot filling was covered with pastry

How thick is thick enough

For a filling that slices rather than floods, use roughly 40g each of butter and flour per 500ml of liquid, simmered until the sauce thickly coats a spoon. It should look slightly too thick in the pan, because the pie will loosen it again.

Frozen vegetables can still go in; thaw and drain them first, or stir them into the hot thick sauce so their water is absorbed before assembly. A watery filling also soaks the pastry from below, so fixing the sauce usually cures a soggy bottom at the same time.
