What is a bakery-style chicken bake?

The chicken bake sits alongside the sausage roll and the steak bake as a staple of British bakery chains. It is an oblong parcel roughly 15cm long, fully sealed, with a filling of chicken pieces in a dense white sauce that stays put when you bite in.

The pastry is puff, but the sealed format means it flakes rather than towers. A crumb or glaze on top distinguishes it visually from the steak version in the cabinet, a practical convention across bakery counters.

Bake versus slice versus pie

A bake and a slice are close cousins: both are hand-held puff parcels with creamy fillings. The bake is typically more fully sealed and pillow-shaped, while a slice is flatter and more rectangular. A pie, by contrast, is round, usually eaten from a plate, and carries a wetter filling because cutlery is assumed.

In practice the names blur by region and by shop. What they share is the core formula: cooked chicken, thick sauce, puff pastry, high heat.

Eat them fresh from the oven but not immediately, since the filling holds ferocious heat for a good five minutes. Leftover bakes reheat at 180C (350F) for 12 to 15 minutes; the microwave turns the pastry to flannel and is not worth the saved time.

A home version

Homemade bakes are a good use of leftover roast chicken and one sheet of ready-rolled puff.

  2. Cut a puff sheet into four rectangles
  3. Spoon filling onto two, cap with the others, and seal the edges firmly with a fork
  4. Egg wash, cut a small steam slit in each, and chill for 15 minutes
  5. Bake at 200C (400F) for 20 to 25 minutes until golden and piping hot inside
