Why one huge pie is a mistake

A very deep or very wide pie bakes unevenly: the pastry edges finish long before the centre of the filling is piping hot, and a deep filling can stay lukewarm while the crust burns. Pies scale best sideways, as more pies, not upwards.

A shallow tray bake solves this. Spread the filling no more than 5cm deep in a roasting tray, cover with a single sheet of puff or shortcrust, and it bakes almost as fast as a family pie.

Quantities by headcount

Filling scales in a straight line: multiply every ingredient by the same factor. Pastry scales slightly under the line, because bigger formats have less edge per portion.

Timing and logistics

Make the filling a day ahead and chill it. Cold filling is easier to work with, and assembly on the day takes minutes. Assembled pies also hold in the fridge for several hours before baking.

Bake at 200C (400F). Two pies on separate shelves need a swap halfway and roughly 10 extra minutes; a tray bake takes 35 to 45 minutes until the pastry is deep gold and the filling bubbles at the edges. Rest everything for 10 minutes before serving so the filling thickens and portions cut cleanly.

Keep the sides simple at scale. Mash for twelve is one big saucepan, but roast potatoes for twelve demand an oven you do not have spare. Buttered peas, a dressed salad and a large jug of gravy stretch the pies further and can all be handled while the trays bake.
