Shortening

Shortening is any solid fat used to tenderize pastry, though the word usually means manufactured vegetable fat with no water content.

Because it is pure fat, shortening makes exceptionally tender, crumbly pastry that holds crimped detail well. What it does not bring is flavor.

Most bakers who use it blend it with butter: butter for taste, shortening for texture and workability in a warm kitchen.
