Pithivier
A pithivier is a domed, free-form French pie made from two rounds of puff pastry sealed around a mounded filling, with spiral lines scored into the lid.
Named for the town of Pithiviers, it is traditionally filled with almond cream, but savory versions with chicken, game, or mushrooms have become restaurant standards.
It bakes free on a tray with no dish, so the seal and the chill before baking do all the structural work.
